Ancel Benjamin Keys was an American physiologist who studied the influence of diet on health. In particular, he hypothesized that replacing dietary saturated fat with polyunsaturated fat reduces cardiovascular heart disease. Wikipedia
In 1949 this chart was used to support Key’s hypothesis that there is a direct correlation between diets high in saturated fat and an increase of heart disease. It was the bedrock for the Food Pyramid which the USDA released in 1992. This 70+ year-old hypothesis still dominates and shapes the average American diet. It’s dead wrong.
Here’s a great article which discusses Ancel Keys and his lifelong crusade to end heart disease by reducing saturated fats and increasing so-called “healthy” carbs. The only problem? He was DEAD wrong.
